Pan fried NZ Greenshell mussels
INGREDIENTS
1 doz live Greenshell mussels
½ C flour
1 tsp lemon pepper
1 tbsp butter
2 tbsp olive oil
Chopped parsley (garnish)
1 x lemon (garnish)
METHOD
Raw shuck the live mussels
Mix lemon pepper and flour together in a bowl
Coat mussels in flour mixture
Heat oil and butter in hot fry pan
Fry mussels until golden brown (about 1-2 mins per side)
Squeeze lemon to taste
